What action should an employee take if they can prove their employer is gaslighting them at work?

In us, your best bet is to find a new job. Unless you'll prove that an employer is engaging in discriminatory behavior based on your membership in a protected class even if the employer is gaslighting you, it's unlikely that you will do something about it. As a result, you'd have to prove, not only, that your employer is gaslighting you, but that the behavior is predicated on your membership during a protected class, which the gaslighting conduct itself is impermissible beneath the law.
If you're protected by a contract or a union and you think that your leader is violating that contract or the rules, then you must contact at first go on workers' compensation audit. You would, of course, need to be ready to prove that the leader is doing one thing that violates that contract or those rules. If the person is very smart at gaslighting, that may not be possible.
If you're in another country, I cannot provide any recommendations beyond meeting with an employment law lawyer in this country. different countries have vastly totally different laws and levels of protection. I might imagine, still, in those countries, there would be an issue of proof.
